When meal planning for the week, we include one "breakfast" meal for dinner (it usually lands on a Thursday or Friday).
Three reasons why: it's easy + cost effective + we love breakfast foods !
An added bonus...we usually have most ingredients leftover from recipes earlier in the week.
The meal itself is different each week, but we tend to stick to the ones that include eggs of course.
Here is a VERY simple "breakfast for dinner" meal you can add to next week's meal plan, we call it our BEST bowl.
Yield: 1 Serving
Ingredients:
2 pieces bacon (nitrate & nitrite free, pasture raised)
2 organic eggs
1/2 s weet potato, small
1/2 c. tomatoes, cherry
Garnish: fresh chives
salt + pepper
Instructions:
1. Pan fry the bacon, eggs and sweet potatoes (separately) on medium heat in a cast iron skillet*
2. Slice tomatoes.
3. Garnish with chives.
*Use the remaining bacon grease to cook your eggs. Remove eggs from the skillet and cook your chopped sweet potatoes (or bake whole at 400 degrees for 40-50 minutes). You may need to add additional oil for the sweet potatoes. You can cook all three on medium heat, at various times depending on how your preference.
