Cauliflower Sweet Potato Soup
Gluten Free + Dairy Free + Sugar Free
Ingredients:
- 1 yellow onion, cubed
- 5 garlic cloves
- 2 large sweet potatoes, cubed
- 1 large head cauliflower, chopped
- 1 can (14oz) full fat coconut milk
- 3-4 cups bone broth
- 2 fresh limes
- Salt to taste
Toppings:
- Avocado
- Cilantro
Optional:
- siracha for spice
Directions
- Roast onion, garlic, sweet potatoes and cauliflower in oven at 425 degrees for 30-35 minutes, or until fully cooked
- Add 1/2 the roasted vegetables to your high speed blender. Add ½ coconut milk, ½ bone broth, 1 lime (fresh juice) and blend until very smooth consistency.
- Repeat step 2 with the remaining vegetables, coconut milk, bone broth and lime.
- Pour into Dutch oven/soup pot & place on stove top on medium-high heat and bring to boil for 1 minute. Then turn off burner. Add salt to taste.
- Toppings: add sliced avocado and fresh cilantro.
- Optional: add siracha for some spice & enjoy soup with sour dough bread.
