Grass fed Beef Veggie Soup

Ingredients

1 large yellow onion

1 tbsp garlic, minced

2 1/2 c celery, sliced

2 ½ c carrots

2 lbs. grass fed beef
-
3 cup sweet potato, frozen diced

2 cans (15 oz) diced tomatoes

2 can (15 oz) tomato sauce

2 cans (15 oz) green beans
-
8 cups bone broth
-
sea salt, to taste
-
2 tsp oregano
Directions
Sauté the onions, garlic, carrots and celery in grass fed butter until soft in large dutch oven stock pot (or skillet)
Add beef to the pot with vegetables and cook until browned
Add the remaining ingredients to the pot and let it come to a boil. When it reaches a boil, lower the temperature and let the soup simmer on low for 20 minutes.
(Since my sweet potatoes are already frozen into cubes, I just add them to the soup when it simmers).
Add any additional salt! I use a generous amount.
Toppings: we like avocado, cilantro & sour cream on top!
