Simple and Easy Spring Dessert

If you’re anything like me, you get excited and long for those sunny, warm days! Thankfully my family moved to one of the sunniest places in the U.S. just a few years back. For those who don’t get sunshine often – this recipe is for you! It screams warm weather, berry picking, healthy eating and summer fun!  We’ve created a gluten free, dairy free and refined sugar free version of this classic warm weather dessert and it is a featured recipe in our Childhood Desserts Reimagined Recipe E-book. We hope it brings you a sense of sunshine no matter the season you are in.

You could say blueberry crisp is made both for special occasions and as a regular go-to dessert. For us, it is both! When I met my husband at the young age of 14, I was introduced to this delicious blueberry treat. The juicy Michigan blueberries his family would get every summer made for the best birthday, Easter, and 4th of July dessert in those early high school years and it quickly became my favorite dessert.  

I remember one summer they ordered 80 pounds of blueberries at one time and stocked our freezers up for the rest of the year. This blueberry crisp even made an appearance at the picnic we had overlooking the river when he proposed to me back in college. You could say this recipe has a bit of nostalgia tied to it, or maybe it is just THAT good.  

Although blueberries are the staple for this dessert, most crisp recipes are surprisingly not as healthy as we think. Loaded with all things gluten and refined sugar, we were determined to make a healthy version of this delicious summer and special occasion / holiday treat.

Pro tip: Don’t be afraid to spice it up! Add dairy free and low sugar ice cream, or whip up some chilled coconut cream for a refreshing topping.
