One Pan Veggie + Sausage Skillet

 

One Pan Veggie + Sausage Skillet

Gluten Free + Dairy Free + Refined Sugar Free

Yield: 3-4 Servings

Three reasons I love this recipe: simple, quality ingredients and it benefits my body. These 3 things you will find in all of our recipes!

 

Recipe:

  • 1 onion (white or yellow)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2 c. brussel sprouts
  • 1 package organic sausage
  • olive oil OR coconut oil
  • sea salt


Directions:

  1. Chop onion & bell peppers into large slices or cubes.
  2. Chop brussel sprouts in half.
  3. Add oil to your cast iron skillet (I use a generous amount-- 2 tbsp), then add onions, bell peppers & brussel sprouts. *If your brussel sprouts start to burn, add more oil.
  4. Add salt to veggies.
  5. After about 10 minutes (or veggies 80% cooked), add precooked sausage (cubed in smaller pieces) to the pan. *You can put a lid on your cast iron to cook faster if needed.
  6. Cook for 6-8 more minutes, or until sausage is fully warmed & starts to brown.
  7. Add additional salt if needed.
  8. Enjoy!
  9. Extra: Add avocado for a topping + eat over rice, sweet potatoes or hash browns!
