Pumpkin Spice Donuts
Gluten Free + Dairy Free + Refined Sugar Free
Yield: 12 Donuts
Dry ingredients:
- 1 cup almond flour
- 1 cup gluten free 1 to 1 baking flour (Bob’s Red Mill)
- ½ tsp salt
- 2 tsp pumpkin spice
- 1/2 tsp cinnamon
- ½ baking soda
Wet Ingredients:
- 2 eggs, (or flax egg for alternative)
- ¼ cup coconut oil, melted
- ⅓ cup + 1 tbsp applesauce
- 2/3 cup pumpkin puree
- 1/3 cup pure maple syrup
- 1 tsp vanilla extract
- 1 tsp of apple cider vinegar
Glaze:
- ¼ cup coconut cream (canned)
- 1 tbsp coconut oil, melted
- 1 tbsp maple syrup
- Splash vanilla extract
- Pinch salt
- Pinch Pumpkin spice
Directions:
1. Preheat oven to 350 degrees
2. Mix all dry ingredients into one bowl
3. Mix all liquid ingredients into a second bowl
4. Pour liquid ingredients into dry ingredients and mix until combined.
5. Pour batter into donut pan and bake for 15-17 minutes.
6. Glaze: Add all ingredients and mix until combined. Set in refrigerator for 5-10 minutes to thicken.
7. Take donuts out of oven & let sit for 5-10 minutes in the pan.
8. Take donuts out & pour glaze over donuts + sprinkle additional pumpkin spice.
9. Enjoy!
*Store donuts in a sealed container in the refrigerator for up to a 7 days.
