Roasted Veggie Bowl + Egg
Gluten Free + Dairy Free + Refined Sugar Free
Roasting is one of the most tasty ways to cook your vegetables! And it is easy. Take whatever vegetables you enjoy and chop consistently. Place them on a baking sheet, drizzle coconut or olive oil + salt, and roast at 400 degrees for 20-24 minutes. Add protein and/or sauce of your choice!
Yield: 2-4 Servings
Ingredients:
- 1/2 cauliflower head
- 1 red onion
- 2 tomatoes
- 1/2 lb. brussel sprouts
- 1 sweet potato, medium
- 2-3 tbsp coconut or olive oil
- salt
- 2-4 eggs, hard boiled or pan fried
Instructions:
- Preheat oven to 400 degrees.
- Chop all vegetables consistently, about the same size.
- Place all vegetables on a baking sheet.
- Drizzle coconut or olive oil + add salt.
- Roast for 20-24 minutes, until you can easily cut through the vegetables.
- Enjoy your vegetables with an egg + optional sauce of your choice!
