Roasted Veggie Bowl + Egg

Roasting is one of the most tasty ways to cook your vegetables! And it is easy. Take whatever vegetables you enjoy and chop consistently. Place them on a baking sheet, drizzle coconut or olive oil + salt, and roast at 400 degrees for 20-24 minutes. Add protein and/or sauce of your choice!

 

Yield: 2-4 Servings

 

Ingredients:

  • 1/2 cauliflower head
  • 1 red onion
  • 2 tomatoes
  • 1/2 lb. brussel sprouts
  • 1 sweet potato, medium
  • 2-3 tbsp coconut or olive oil
  • salt
  • 2-4 eggs, hard boiled or pan fried


Instructions:

  1. Preheat oven to 400 degrees.
  2. Chop all vegetables consistently, about the same size.
  3. Place all vegetables on a baking sheet.
  4. Drizzle coconut or olive oil + add salt.
  5. Roast for 20-24 minutes, until you can easily cut through the vegetables.
  6. Enjoy your vegetables with an egg + optional sauce of your choice!
