A simple dairy free and gluten free warm creamy soup!
Ingredients

1 small yellow onion, diced

1 tbsp olive oil
-
2 lbs chicken breast, cut into small bite size pieces

3 cans white beans, drained and rinsed

3 cups sweet potatoes, cubed

2 cans coconut milk (15 oz)

2 ½ cups bone broth
-
1 jar salsa verde (12oz)

1 tsp sea salt
-
1 tsp cumin
-
1 tsp oregano
-
1 lime, juiced

Optional Toppings: chopped cilantro, chopped green onion, tortilla chips, cheese
Directions
Add olive oil to a large pan on medium heat and saute onion until it is translucent
Add chicken pieces to the pan and saute until fully cooked (golden brown). Set aside.
Add olive oil and saute chopped sweet potatoes in the pan until soft, about 8 minutes.
Add onion, chicken, white beans, sweet potatoes, coconut milk, bone broth, salsa verde, salt, cumin, oregano to a large pot
Bring soup to a low boil in the large pot on medium-high heat. Then let the soup simmer on low heat for 20 minutes
Serve warm (add more salt if needed) and add any toppings of choice (cilantro, green onion, tortilla chips, cheese)
